Well-Seasoned Olives

Possibly my new favorite entertaining hack, this recipe for Well-Seasoned Olives is so simple, yet so delicious. Made by warming olive oil with fresh herbs, and marinating olives in the warm oil, the olives burst with flavor. The olives are the perfect addition to any charcuterie board or on the side of any classy cocktail.

Ingredients:

2 cups olives (I used Kalamata & Frescatratano)
1 lemon, zested
½ cup extra virgin olive oil
2 Tbsp white wine vinegar
2 bay leaves
3 cloves garlic, smashed
2 tsp fresh rosemary, chopped
10 sprigs fresh thyme

Directions:

In a small saucepan, warm olive oil, spices, zest, vinegar, and garlic. Do not simmer. Once warm, pour over drained olives. Let sit at room temperature for at least 1 hour. Serve or store in the refrigerator. If refrigerating, let sit at room temperature for 30 minutes to thaw olive oil before enjoying again. Enjoy!
