One of my favorite summertime desserts and a perfect way to celebrate berry season is this White Chocolate Berry Pizza. With a sugar cookie crust, cream cheese base, and fresh berries, this pizza is to die for. Use whatever berries and fruit you wish to make this pizza your own.
Ingredients:
For the crust:
1 cup butter, room temp
1 cup sugar
1 tsp vanilla
1 egg
½ tsp salt
2 tsp baking powder
2 ¾ cup flour
For the Frosting:
8 oz cream cheese, softened
¼ cup butter, room temp
½ tsp vanilla
2 cups powdered sugar
1 bar white chocolate, divided
To assemble:
1 pint strawberries, sliced
1/2 pint blackberries, sliced
1/2 pint blueberries
1/2 pint raspberries
Directions:
Preheat oven to 350 degrees Fahrenheit.
To make the crust:
In the bowl of a stand mixer, cream butter, sugar, vanilla, and salt together until fluffy. Add in egg and beat until combined. Add flour and baking powder and mix until dough just comes together. Press into a 12” pizza pan or a smaller baking sheet. Bake for 14-16 minutes, or until the crust is just starting to turn golden. Remove from the oven and cool completely.
Once the crust has cooled, begin the frosting.
In a small microwave safe bowl, heat the white chocolate until melted. Spread a very thin layer over the cookie. Reserve the remaining chocolate.
In the bowl of a stand mixer, beat together softened cream cheese, vanilla, and butter. Once fluffy, beat in remaining white chocolate. Slowly add in powdered sugar and beat until well incorporated. Spread onto the cookie. Decorate with fruit and enjoy! Store leftovers in the refrigerator.
