Butter Broiled Lobster Tails

Can you say DELICIOUS?! These Butter Broiled Lobster Tails are an amazing special meal that is actually super simple to make. The decadent garlicky butter compliments the tender delicate lobster meat perfectly. Ready in minutes, this meal is a perfect addition to any celebratory meal. Try serving with creamy mac and cheese or a simple side salad. Use any leftovers to make Fresh Lobster Rolls or Lobster Bisque (hint: save the shells)!

Ingredients:

2 lbs lobster tails, about 7-8 small tails
¼ cup Kerrygold butter, salted
3 large cloves garlic, minced
2 Tbsp parsley, minced
½ tsp paprika
Salt and pepper to taste
1 lemon, half sliced, half for squeezing

Directions:

Turn on your oven’s broiler on High or preheat oven to 500 degrees. (Make sure your oven is clean or you’ll have a smoky house!)

Gently melt butter. Add garlic, paprika, 1 Tbsp parsley, and garlic, stir. Take off heat and set aside.

Cut lobster tails’ shells down the back, being careful to avoid cutting the meat. Cut up to the tail. Carefully, yet forcefully, separate the meat from the shell, pulling it up so it’s halfway above the shell. Fold over the flaps on the top. Remove the dark intestine and rinse if necessary. Place in a glass baking dish or sheet pan with an edge. Season with a sprinkle of salt and pepper.

Brush butter mixture over lobster tails. Add sliced lemon. Broil for 9 minutes, or until a thermometer reads 140 degrees in the tails. The average rule of thumb is 1 minute per ounce of lobster. My tails were smaller so they only took 7-8 minutes to fully come to temp. Keep an eye on the tails while they’re in the oven so as to not burn them. Move farther away from heat if this becomes an issue.

Remove from the oven and garnish with remaining Tbsp parsley and a squeeze of lemon. Serve hot and enjoy!
