Not caviar at all, but tasty jewels of beans and vegetables in a sweetly seasoned dressing. You’ll be making this recipe for every summer party!
Ingredients:
1 can black beans, drained and rinsed
1 can pinto beans, drained and rinsed
2 cans shoepeg corn, drained
½ red bell pepper, diced small
½ orange bell pepper, diced small
1 small red onion, diced small
1 medium tomato, liquid drained, diced small
2 jalapenos, seeded and diced small
½ bunch of cilantro, minced
½ cup olive oil
¼ cup white vinegar, or white wine vinegar
1 lime juiced, or two smaller limes
⅛ cup sugar
¼ tsp garlic powder
1 tsp kosher salt
Directions:
Mix olive oil, vinegar, sugar, salt, lime juice, and garlic powder in a small dish. Place all other ingredients in a large bowl. Top with dressing and stir well. Cover and let chill at least 1 hour. Enjoy!
